As my friends and family know, I have always been passionate about cooking and being the youngest of a family of twelve, I have fond childhood memories of preparing the traditional Spanish dishes of the Canary Islands for my family. As I love to say, everything that I cook is made from scratch just like how my mother taught me.
The Canary Islands are situated in the Atlantic Ocean and has served as a bridge between the European, African, and American continents which is reflected in its rich and varied cuisine. With more than 60 micro-climates and volcanic nature of the islands, the wines develop a unique flavor that has been enjoyed for centuries and served during the official Toast for the Declaration of Independence of the United States in 1776.
From an early age, I prepared family meals with my mother and grandmother. I can still recall when I was 10 years old, I taught my newlywed sister how to prepare her first meal for her husband since she had not learned how to cook. In my big family, we would get together very often - anything was an excuse for us to have a dinner or party. We shared dishes, family recipes (some of them more than 150 years old), and learned how to cook from scratch. That is how I grew up.
My mother always told me: any dish that you prepare, put all of your heart into making it, try to use the best ingredients available and focus on what you are making; but most importantly, pour your heart and passion into your cooking. Other members of my family are also very involved in cooking, and I am very proud of my sister Lourdes who has written numerous cookbooks and has been honored with three Gourmand World cookbook awards.
During my professional career, I have learned from the best Canary Islands chefs, shared their recipes and techniques, discovered new flavors, and above all experienced the aroma and taste of the delicious tapas bars and restaurants of Spain.
Through Tapas & Fun, I hope to share my love, knowledge, and passion of the foods and flavors of Spain so you can be as passionate about it as I am.
